Paresa Resort (www.paresaresorts.com), the luxurious Thai hideaway in the Kamala hills of Phuket, hosted the first in a series of extraordinary gourmet food and wine dinners in April and raised over £10,000 to support its nominated charity, the ‘Barnhem Home for Children’ in Muang Mai. Under the theme ‘Innovation meets Tradition’ the evening featured the renowned Peruvian chef Paulo de Souza, Head Chef at the award-winning Jumeirah Beach Hotel in Dubai, who was making his third visit to Paresa to appear as guest chef alongside the resort’s own Executive Chef, Jordi Valles Claverol. Both Claverol and de Souza have previously worked in Michelin three-starred establishments in Spain, so April’s event was effectively a ‘six-star dinner’, with Claverol spending part of his early career at one of Barcelona’s most glittering establishments, the illustrious Michelin three-star restaurant ‘El Racó de Can Fabes’. Whilst de Souza spent time at the famous ‘El Bulli’ restaurant and in the kitchen at ‘Gordon Ramsay Restaurant, London’.
To the delight of the 40 diners these two exceptional talents created an eight-course tasting menu mixing new and modern dishes with more traditional ones. Featured dishes included a starter of Porcini carpaccio with smoked aubergine, followed by Rock Fish with sweet potato and Peruvian chilies. The highlight of the evening was a ‘Group(ER)’ a dish of Andaman Grouper with white clams, bread & tomato salsa’. Three desserts featured ‘Passion Fruit, Basil, Vanilla Chantilly’, ‘Dolce & Panna’ - a Dulce de Leche with lime and crepe flakes followed by ‘Mignardise’ – a Lemon curd meringue cornetto with Passion choco rocks. Wines for the dinner were paired with each course by Paresa’s General Manager and wine expert, Dawid Koegelenberg. Following the success of April’s event, de Souza will be returning to Paresa in November 2016 to take part in a ‘Twelve Hands Dinner’ which will see six of the world’s top chefs coming together for one night only to raise money for the Barnhem children’s home.
